Moru Curry
INGREDIENTS
Butter milk - ½ litre
Coconut oil - 2 tbsp
Mustard seeds - 1 tsp
Fenugreek seeds - ½ tsp
Cumin seeds - ½ tsp
Dry red chilies - 3-4
Curry leaves - 10-12
Ginger - 1 tsp ( Grated )
Garlic - 5-6 cloves ( Crushed )
Green chilies - 2 ( Slit into halves )
Shallots - 6-7 ( Thinly sliced )
Turmeric powder - ½ tsp
Salt to taste
INSTRUCTIONS
- Heat oil in a pan.
- When the oil is hot, add mustard seeds, fenugreek seeds, cumin seeds and dry red chilies.
- Let them splutter for a few seconds.
- Add curry leaves, ginger, garlic and green chilies and fry for a few seconds.
- Add shallots and fry till slightly browned.
- Add turmeric powder and switch off the heat.
- Add buttermilk and mix well.
- Switch on the heat and cook the curry on low heat til it just starts to boil.
- Do not let the curry boil.
- Keep stirring continuously.
- Switch off the heat.
- Add salt and mix well.
- Serve Moru Curry with steamed rice.
